Ingredients: |

1 Chicken - (4 lbs) --
cut 8 serving pieces |
|
|
|
1 Juice of 1 lime |
|
|
|
|
2 medium Yellow onions --
peeled and sliced |
|
|
2 Tomatoes, red ripe --
coarsely chopped |
|
|
3 Garlic cloves -- peeled
and crushed |
|
|
3 Scallions -- chopped |
|
|
|
1 1/2 teaspoons Dried
thyme, whole |
|
|
1 teaspoon Salt |
|
|
|
1/2 teaspoon
Freshly-ground black pepper |
|
|
2 tablespoons Olive oil |
|
|
|
1/2 cup V-8 Juice |
|
|
|
1/3 cup Water |
|
|
|
Method: |
|
|
|
Toss all the ingredients except the Olive
oil and |
|
|
water in a large bowl and marinate for 1/2
hour. |
|
|
|
Drain the chicken, reserving the marinade
and |
|

vegetables. Brown the chicken in a non-stick
frying |

|
pan, using the oil. You should probably do
this in |
